Clearspring Agar Flakes is a traditional Japanese gelling agent made from sea plants which is often used as a vegan gelatin substitute.

Clearspring Agar Flakes, known as "kanten" in Japanese, are a premium quality vegetarian & vegan alternative to gelatine and thickening agents. Agar flakes have a neutral flavour and are free from any bleaching chemical or softening agents making them ideal for making desserts, jellies and aspics.
Agar and gelatin serve similar purposes as both gelling and thickening agents. Gelatin is made from animal derivatives, whereas agar flakes are made from sea plants making it a popular alternative to gelatine.
Approximately one heaped tablespoon of agar flakes should be used for each 250ml of liquid. If the liquid being used is acidic then more agar flakes would be needed.
